Creamy Scrambled Eggs with Citrus Berry Yogurt Parfait
Ingredients
- 4 Eggs
- 1/4 cup A2 Milk
- 1/2 cup Chobani Yogurt (or Moolicious)
- 1/2 cup Raspberries
- 1/2 Orange, peeled and segmented
- 1/2 Lime, juiced and zested
- 1/4 cup Applesauce
- 1 tbsp Butter
- Salt to taste
- Pepper to taste
Instructions
- 1In a bowl, whisk eggs with A2 milk, a pinch of salt, and pepper until well combined.
- 2Heat butter in a non-stick skillet over medium-low heat. Pour in the egg mixture.
- 3As eggs begin to set, gently push cooked portions towards the center, tilting the pan to allow uncooked egg to flow underneath. Continue until eggs are mostly set but still moist and creamy.
- 4In a separate glass or bowl, layer Chobani yogurt, raspberries, orange segments, and applesauce. Drizzle with a squeeze of lime juice and sprinkle with lime zest.
- 5Serve the creamy scrambled eggs alongside the citrus berry yogurt parfait.
